You guys. Seriously. I can’t. This is the best apple streusel muffin recipe I’ve ever made.
We love apple and pumpkin year round at our house. (And not just because we live in Salem, har har…)
And with the pandemic and winter on its way again, comfort food is very much still on the menu.
These muffins are super easy to make. They’re perfect for a lazy weekend brunch. Or for midnight nibbling when you roll in on a Saturday night.
The streusel topping is buttery and laced with cinnamon.
Enough yapping. To the ovens!
The Best Apple Streusel Muffins
Crumb Topping
1/3 cup dark brown sugar
1 Tablespoon white sugar
1 teaspoon ground cinnamon
1/4 cup butter, melted
2/3 cup flour
Muffin Batter
1/2 cup butter, melted
1/2 cup dark brown sugar
1/4 cup white sugar
2 large eggs
1/2 cup yogurt
1 Tablespoon vanilla extract
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup milk
2 cups peeled, chopped apples (that’s about 2 small apples)
Glaze
1 cup powdered sugar
1/4 cup heavy cream
1/2 teaspoon vanilla extract
Yields about 12 muffins
Do a little prep
Preheat your oven to 400 degrees F.
Line a muffin tin with paper baking cups and set aside.
Make the crumble topping
Put the brown sugar, white sugar, and cinnamon in a mixing bowl.
Mix with a fork until well combined.
Drizzle in the butter, and stir until well combined.
Add the flour and mix until uniform.
You’re aiming for a rough crumb, like this:
Set that aside for a few while you make the batter.
Make the apple streusel muffin batter
In the bowl of your stand mixer (or a large mixing bowl if you’re mixing bowl by hand) put the brown sugar, butter.
Cream them together into a paste.
Add the eggs, yogurt, and vanilla extract.
Beat until well combined.
Toss in the flour, baking soda, baking powder, cinnamon, salt, milk, and chopped apples.
Mix it until uniform.
Your batter will be stiff and creamy.
Grease your muffin tins and line with muffin papers.
Fill each muffin cup with a few spoons of batter, about even with the top of the muffin liner.
Cover the tops of the batter with the streusel topping.
Bake the best ever apple streusel muffins
Pop the pan into your preheated, 400-degree F oven.
Bake for 20 – 25 minutes, or until a toothpick comes out clean when you insert it in the middle.
When they’re done, yank them out of the oven.
Let them cool in the pan for 10 minutes, then turn them out onto a rack.
I mean, really, I’ll admit. I had one hot out of the pan. (Can you blame me?)
Make the glaze
Put the powdered sugar, cream, and vanilla in a bowl.
Mix well with a fork or a whisk until uniform.
Glaze your apple streusel muffins
Drizzle the glaze liberally over your muffins.
(It helps to put paper towels or parchment paper underneath the racks to catch any drips.)
Lay the glaze on as thick or thin as you like.
